The Power of Anti-Inflammatory Ingredients
Inflammation is at the core of many health concerns, from chronic pain to digestive issues. Our Anti-Inflammatory Chicken Spring Rolls are designed to combat inflammation and support your overall well-being. Here’s a glimpse of what makes them so special:
1. Chicken Breast: Lean and Protein-Packed
Our recipe features tender, boneless, skinless chicken breast, a low-fat protein source that helps rebuild and repair body tissues. It’s a perfect addition for those looking to increase their protein intake without excess fat. And look for brands like Mary’s organic chicken.
With NO Genetically Modified Organisms (GMOs) NO Antibiotics Ever. NO Pesticide Treated Grains. NO Grains Grown with Chemical Fertilizers.
2. Turmeric: Nature’s Anti-Inflammatory Spice
Turmeric, with its active compound curcumin, is renowned for its anti-inflammatory properties. I’ve incorporated it into the dipping sauce to infuse these spring rolls with a vibrant, earthy flavor. For more powerful anti-inflammatory benefits, turmeric could be incorporated into the marinade for the cooked chicken.
3. Fresh Veggies: Nutrient-Rich and Fiber-Packed
These spring rolls are bursting with colorful, fresh vegetables like shredded carrots, crisp English cucumber, and aromatic cilantro. These veggies not only add a beautiful crunch but also rich in vitamins, minerals, and fiber to promote digestive health. Feel free to add any veggies of your choosing.
The Sunflower Seed Butter Dipping Sauce: A Creamy Delight
To elevate the flavor profile and maintain the anti-inflammatory theme, I’ve crafted a delectable Sunflower Seed Butter Dipping Sauce. This creamy dip is an excellent source of healthy fats and essential nutrients:
1. Sunflower Seeds: Heart-Healthy Goodness
Sunflower seeds provide a dose of heart-healthy monounsaturated fats, vitamin E, and essential minerals like magnesium and selenium. They contribute to a lusciously smooth texture and a slightly nutty flavor.
2. Maple Syrup: Natural Sweetness
I’ve sweetened the sauce with pure maple syrup, a natural sweetener that adds a touch of sweetness without refined sugars. It also delivers antioxidants and nutrients like manganese and zinc.
3. Coconut aminos
These may be new to you but I highly recommend them. Coconut aminos are much lower in sodium than soy sauce and are a great alternative.
A hint of coconut aminos, rice vinegar, and a dash of garlic powder perfectly balances the flavor, resulting in a dipping sauce that complements the spring rolls beautifully.

Chicken Spring Rolls with Sunflower Seed Butter Dipping Sauce
– 4 Rice paper wrappers
– 1 cup Shredded carrots
– 1 cup English cucumber, thinly sliced
– 1/4 Bunch fresh cilantro, Thai basil or mint leaves
– 1/4 cup Chopped green onions
– 8 oz Cooked boneless, skinless chicken breast
– 1 tsp Coconut aminos or liquid amino acids
– 1 tsp Rice vinegar
– 1 tsp Maple syrup
For Dipping Sauce:
– 1/4 cup Peanut butter
– 2 tbsp Maple syrup
– 1 tbsp Coconut aminos
– 1 tbsp Rice vinegar
– 1/4 tsp Turmeric
– 1/4 tsp Garlic powder, optional
– Water (as needed)
1. In a medium bowl, shred the chicken and season it with salt and pepper to taste.
2. In a small bowl, whisk together coconut aminos, rice vinegar, and maple syrup. Pour this dressing over the shredded chicken and toss to combine.
3. Fill a shallow dish or large pie plate with warm water. One at a time, dip each rice paper wrapper into the water for about 10-15 seconds until it becomes soft and pliable. Transfer the softened wrapper to a clean work surface.
4. Place a generous spoonful of the chicken mixture in the center of the wrapper. Add a few sprigs of cilantro, a spoonful of shredded carrots, some cucumber slices, and green onion on top of the chicken.
5. Fold the bottom edge of the wrapper up over the filling, then fold in the sides, and roll tightly to enclose the filling, similar to making a burrito. Repeat this process with the remaining wrappers and filling.
For The Dipping Sauce:
1. In a small bowl, whisk together sunflower seed butter, maple syrup, coconut aminos, rice vinegar, turmeric and optional garlic powder until the mixture is smooth.
2. Add water, one tablespoon at a time, to thin the sauce to your desired consistency.
Enjoy your simple chicken spring rolls dipped in your sauce!
