Chicken Spring Rolls with Sunflower Seed Butter Dipping Sauce
Ingredients:
– 4 Rice paper wrappers
– 1 cup Shredded carrots
– 1 cup English cucumber, thinly sliced
– 1/4 Bunch fresh cilantro, Thai basil or mint leaves
– 1/4 cup Chopped green onions
– 8 oz Cooked boneless, skinless chicken breast
– 1 tsp Coconut aminos or liquid amino acids
– 1 tsp Rice vinegar
– 1 tsp Maple syrup
For Dipping Sauce:
– 1/4 cup Peanut butter
– 2 tbsp Maple syrup
– 1 tbsp Coconut aminos
– 1 tbsp Rice vinegar
– 1/4 tsp Turmeric
– 1/4 tsp Garlic powder, optional
– Water (as needed)
Instructions:
1. In a medium bowl, shred the chicken and season it with salt and pepper to taste.
2. In a small bowl, whisk together coconut aminos, rice vinegar, and maple syrup. Pour this dressing over the shredded chicken and toss to combine.
3. Fill a shallow dish or large pie plate with warm water. One at a time, dip each rice paper wrapper into the water for about 10-15 seconds until it becomes soft and pliable. Transfer the softened wrapper to a clean work surface.
4. Place a generous spoonful of the chicken mixture in the center of the wrapper. Add a few sprigs of cilantro, a spoonful of shredded carrots, some cucumber slices, and green onion on top of the chicken.
5. Fold the bottom edge of the wrapper up over the filling, then fold in the sides, and roll tightly to enclose the filling, similar to making a burrito. Repeat this process with the remaining wrappers and filling.
For The Dipping Sauce:
1. In a small bowl, whisk together sunflower seed butter, maple syrup, coconut aminos, rice vinegar, turmeric and optional garlic powder until the mixture is smooth.
2. Add water, one tablespoon at a time, to thin the sauce to your desired consistency.
